Carbohydrates are molecules based on carbon, oxygen and hydrogen. It is the collective name given to starches, sugars and dietary fibres found in horse feed which can be digested in some form to provide energy. Carbohydrates are processed by the horse’s digestive system at different rates. Starch and sugar are digested quickly and provide a lot of energy (instant energy), however a horse's capacity for digesting staches and sugars are limited. Fibres are digested slowly and so produce more controlled, slow-release energy. Fibres are digested with the help of microbes in the horse's intestines.

Les glucides sont divisés en sucres simples (oses) et en sucres complexes (osides) et recouvrent également les hydrates de carbone présents dans les fibres alimentaires.
Les glucides peuvent être digérés plus ou moins lentement selon la variété de sucre. L'amidon et le sucre simple sont rapidement digérés et sont ainsi immédiatement disponibles sous forme d'énergie.
Les hydrates de carbone venant des végétaux sont digérés plutôt lentement et fournissent ainsi de l'énergie sur le long terme.

Stärke und einfache Zucker werden schnell verdaut und stehen somit schnell als Energiequelle zur Verfügung, Kohlehydrate aus Pflanzenfasern werden eher langsam verdaut und liefern dem Körper Energie, die langsam freigegeben wird.
