A carbohydrate consisting of many molecules of glucose, joined by so-called glycosidic bonds. Starch is produced by plants to store energy; it is a non-structural carbohydrate. It is particularly abundant in grains (cereals) or roots (e.g. potatoes, beet roots), but is also produced in the plant's leaves to supply energy at night (when there is no photosynthesis due to the lack of light). Enzymes, called amylases, are able to break down starch into its glucose components which then provide energy to the body (of human or horse). In comparison to fibre, starch is fairly easy to digest, so by feeding horses a diet high in starch, one provides quickly accessible energy. However, feeding large amounts of starchy food at once can cause digestive problems for the horse.

Cells which have the potential to develop into many different cell types in the body during embryonic development and growth. In adults, stem cells serve as an internal repair system by being able to divide without limit to replace other cells - each new cell has the potential either to remain a stem cell or to differentiate into another type of cell with a more specialized function, such as a blood cell or a muscle cell. In equine medicine, stem cells can be used therapeutically, for instance in the treatment of tendon lesions in the horse.

A type of organic compound containing a characteristic arrangement of carbon and hydrogen atoms (cycloalkane rings). Steroids occur naturally in all animals, where they act as signaling molecules and are a component of cell mebranes and . Examples of steroids include the sex hormones testosterone and oestradiol.
Artificial or naturally occuring anabolic steroids are drugs that are used to synthetically enhance bone and muscle development. These drugs are banned from use in all equine sports as they can be performance enhancing and are often considered typical 'doping' drugs.
Steriod based anti-inflammatory drugs (e.g. dexamethasone) are used for a variety of medical indications including pain relief and immuno-supression. These drugs have therapeutic use in horses but are prohibited during competitive use of a horse.

The stiflejoint is the equivalent of the kneejoint in humans. The joint is located between the thigh and the leg (gaskin).The bones forming the stifle joint are the femur, the patella and the tibia; there are two joint pouches, one between the femur and the patella (femoropatellar joint) and one between the femur and the tibia (femorotibial joint). The joint contains a pair of cartilagenous menisci and cruciate ligaments.

pine tar
Stockholm or pine tar is made from pine wood that is heated to 250°C in anoxic conditions (dry distillation). The resulting black viscous fluid is an extremely good preservative, traditionally used to protect hooves that are continously exposed to damp conditions. As the tar forms a seal on the hoof, it is important to thoroughly clean and desinfect the areas before applying the tar.
Stockholm tar was also a mainstay of the shipping industry, where it was used to preserve wooden hulls and ropes from rot.
